The flesh of the mutton bird is a very rich and dark. This recipe helps to remove the salt from the flesh. Take 2 freshly kiled mutton birds. Boil for three hours. Keep changing the water once it has boiled. Serve with Wild water cress and Potato bread. The person who donated this recipe had birds sent by relations who captured the birds from TiTi Island (Mutton bird Island)
